Before potatoes, Ukrainians cooked with millet for centuries. But when the potato arrived in the 18th–19th centuries, it reshaped their entire cuisine. Ukrainian chef Yevhen Klopotenko explores how the potato became one of the most important ingredients in Ukrainian cooking and prepares deruny — also known as draniki — crispy potato pancakes that have become one of Ukraine’s favorite comfort foods, proving that a single ingredient can transform a nation’s culinary culture.
