You can only do every goal with the first rider here. The other rides are missing required tricks for certain goals and the ability to change tricks is locked in the demo, so they're impossible with anyone else.
No matter who you play as, the demo always ends with that small little video of the rider i played as here.
It's impossible to complete every goal in one run. The way everything is laid out in this level is too much a distance for one run. Plus, some of these you must stop and talk to someone to activate, so some time is wasted doing that, too.
