Eating a nutritious and appetizing meal in your motorhome doesn't have to cause a head ache, especially if you are looking for something that requires little clean up as well.

This recipe is ideal winter warmer if you've been out exploring all day, or even if you've just been taking it easy inside your outfit on the campsite.

Chicken Pilaf for two people:
- Four chicken thighs
- Olive oil
- One white onion
- One red pepper
- Two sticks of celery
- One large carrot
- 150g chestnut mushrooms
- Two chunky cloves of garlic
- 150g of long grain rice
- 750ml of veg or chicken stock
- A handful of fresh tarragon
- 10 cherry tomatoes
- 100g of garden peas
- Salt and pepper
