With certain diets, one of the most common hurdles is having to give up the “good stuff,” the sweets. It’s not fun. We often turn to guilty eating, and even deprive ourselves of the things we love. So what happens? We either give up treats entirely, which for many leads to burnout, temptation and frustration, or we consume “healthy” artificial alternatives which quite frankly lack in taste and even worse, do our body as much harm as a sugar-laden treat.
Well, I’m here to share with you that keto isn’t a fad or even a diet. It has resurfaced as a healthy way of life in recent times, and people are certainly capitalizing on its potential for weight loss; but the ketogenic diet as it is known, or keto lifestyle as I prefer to call it, is by no means new. The principle of healthy fats, and no sugar, goes back a long, long time; and its long-term benefits go far beyond losing weight. The best part of it all, and the subject of today’s video, is that you DON’T have to sacrifice the good stuff. You may have seen my video titled “10 “unhealthy” foods that are in fact good for you” (which you can find below this description), which details some keto-friendly, healthy foods that we have always been told to avoid. But in this video, we’re focusing on one of my all time favorites... ice cream. Keto ice cream, to be more specific. This is a favorite in my household! I love it and my children can’t get enough of it, and the beauty of it all is that it is delicious and so easy to make. It only takes a few simple ingredients (listed below with instructions) and hardly takes any time; you just drop all the goodness in a bowl, whisk it up, place it in the freezer and you’re good to go. It’s really that easy!
No need for artificial treats or denying yourself of your favorite foods. As part of the keto lifestyle you can enjoy more than you think while improving your health and effectively managing your weight...even when you spoil yourself.

Ingredients:
4 each whole large eggs
5 each large egg yolks
2 ¼ oz Creamy MCT oil
7 tbsp butter
1Tbsp vanilla extract
¾ Tbsp lemon juice
1.5 Tbsp Monk Fruit (*optional, according to taste)
Directions:
Leave all ingredients at room temp for 1 hour. Blend, on high for 5 minutes, all eggs, monk fruit, vanilla, and lemon juice. Place in container and freeze for 8 hours. Keto Ice Cream is best eaten within 24 hours but can be enjoyed for up to a month. If Keto Ice Cream sets up too hard, microwave in two 20-second intervals to soften.
Nutrition Facts: (serving size: about 1/2 cup) Fat: 27 g Protein: 3 g Fiber: 0 g Carb: 1 g Net Carb: 1 g

Joseph Maroon is an American neurosurgeon, author, and triathlon athlete. He is the professor and vice chairman of the Department of Neurological Surgery at the University of Pittsburgh Medical Center, and is the current medical director of WWE.[1][2] He is particularly known for his work studying concussions and concussion prevention as well as his hypothesis (after the discovery of the CTE by Dr Bennet Omalu) on the development of chronic traumatic encephalopathy (CTE).
Maroon earned his B.S. degree in anatomy and physiology from Indiana University in 1961, and his M.D. from the Indiana University School of Medicine (IUSOM) in 1965. He received post-graduate education at IUSOM (1966), Georgetown University Hospital (1967), John Radcliffe Hospital (1969), IUSOM (1971) and the University of Vermont College of Medicine (1972).[3]
