This recipe is the result of a midnight brainwave about delicious fried foods. We wrap up a filling inspired by the timeless classic dessert Bananas Foster inside fluffy bao dough. The bao are first steamed, and then deep-fried to create a delicious treat.

In the video we demonstrate a technique for filling bao with a very runny filling. I suggest that instead of that you use an ice-cube tray with small cells (or fill them half-way). Once the filling has frozen into mostly-solid lumps it should be a lot easier to wrap in dough.

We like to steam the bao first in order to ensure that the dough has set on the outside before dropping it into the fryer. Depending on your frying set-up it may be practical for you to deep-fry them directly from raw. Feel free to experiment and see what gives the best results.

Makes enough for 16 bananas foster bao.

Equipment:
• steaming setup
• deep-frying setup
• oiled small sheet-pan
• 1 batch of bao dough split into 16 dough balls
• medium-sized mixing bowl
• ice-cube tray

Ingredients:
1 ea banana
2 Tbsp brown sugar
2 Tbsp butter softened
1 Tbsp rum overproof if possible; or ~1/2 tsp of rum extract
1/4 tsp cinnamon
1/4 tsp salt

Procedure:
1. Mash all ingredients together.
2. Place about 1 Tbsp of the mixture per cell into an ice-cube tray and freeze.
3. Once filling is frozen, wrap each lump with a ball of bao dough.
4. Steam the bao for about 5 minutes.
5. Allow the steamed bao to dry on their surfaces, then deep-fry until they look delicious.
6. Remove from the fryer and promptly dust with powdered sugar.
7. Serve warm but eat with caution!
