Smash burgers
PREP TIME: 10 min | COOK TIME: 4–6 min | SERVES: 8
Ingredients:
• 2 lbs. ground pork
• Salt and pepper to taste
• 2 Tbsp. vegetable oil
• Cheese as desired
• Condiments as desired
• 8 brioche buns toasted
Directions:
1. Portion ground pork into 4 oz. balls.
2. Preheat a griddle or cast-iron skillet to 350°F and season with a small amount of oil.
3. Place pork balls onto the griddle keeping them at least 4 inches apart.
4. Using a metal spatula or burger press smash each ball into a thin disc.
5. Season patties with salt, pepper or your favorite seasoning after smashing.
6. Once a crust develops on the seared side flip each patty and top with cheese.
7. Finish cooking and remove from heat. Total cook time may be as little as 4 minutes.
8. Place patties onto toasted brioche buns and top with your favorite condiments.
Advice:
• Make sure the griddle is properly preheated before adding the pork balls to get a good sear.
• A metal spatula works best for smashing — press firmly and quickly for the thinnest patty and best crust.
