Several ways to make and enjoy potato soup, but I prefer a fast and easy crockpot method. To save time, I’ve grown to love using frozen Potatoes O’Brien vs. washing, peeling & cutting up golden Yukon potatoes like I used to do. Depending on your preferred texture and thickness, you can add cream of chicken soup (fun tip: Use Marie Callender’s Chicken Pot Pie canned soup). You can go a step further by adding in some instant potato flakes. I like to serve in mini sourdough bread bowls from Kroger with shredded cheddar cheese and a dollop of sour cream. Sprinkle with crispy bacon bits for added yumminess! 😋
