Having a lot of trouble taming this horse I went looking for hints. I was basically doing it right but getting nowhere, however one YouTube had a comment that rapidly hitting square on PS5 did it instantly. It did as you can see in this clip. It may get patched or not work on PC/Xbox using their ride button but give it a try.
