Matthias is a knight, he has two healthbars. He is the easiest boss in the game, his attacks don't deal much damage, he only does some basic sword attacks and kicks, which are quite slow.
The easiest method is to land a light attack combo with 3x :r1: / :rb: - follow up with a heavy attack combo 3x :r2: / :rt: - this will interrupt him. Note that heavy attacks consume stamina and light attacks do not. Make sure you're at full stamina before starting a combo.
Dodge far away from him to let your stamina recharge, then run in (tap :x: / :a: to run toward him), do a quick combo, follow up with a heavy combo, repeat. If he attacks you mid-combo, dodge away.
Remember you can heal with food items during the fight. Hold :right: to select a food item (bottom of item wheel, click :r2: to cycle through food items), once selected tap :right: during combat to eat the food. If you get stuck in this fight, you can quit out during the game over screen and buy a bunch of meat from the meat vendor in Hernand town. Then use the cooking pot to the immediate right of the meat vendor to cook the grilled meat that restores 80 health.
