In the recent World Barista Championships, the competitor from the Philippines famously removed crema from the espressos he served to the judges. Now, this is not a novel idea, but it is certainly a risky one on such a stage. Crema, and its place in espresso, has been debated more heavily in recent years. But, we mustn't forget its emergence in coffee in the late 1940s was not without controversy!
