Stuffed Mushrooms Recipe
Ingredients:
large mushrooms (portobello, cremini, etc),
4 oz plain cream cheese (softened),
1/2 c. parmesan cheese,
1/2 c. panko bread crumbs,
freshly chopped parsley,
1/2 lb. ground pork sausage or meat of choice (optional),
seasonings to taste
Directions:
1- Preheat oven to 400F and line baking sheet with foil or parchment paper
2- Clean mushrooms with damp paper towel & scoop out insdes of mushrooms.
3- In medium bowl, combine all ingredients but mushrooms. Use a fork (or your hands) to mash ingredients together until fully incorporated.
4- Place mushrooms cap side-down onto parchment paper or foil pan & separate mixture evenly amongst mushrooms.
5- Bake for 20-25 minutes until meat mixture is fully cooked and mushrooms are golden brown.
6- Serve by themselves or with favorite spaghetti noodles and sauce.
