With a bit of modding I managed to unlock some features that were locked away in the demo.
I haven't managed to play as the other characters in races yet, the game just softlocks.
Previews for all tracks exist in the demo (minimap and logo), but only the two existing tracks can be played.
The Penguins In Flight minigame has coding set up, but the model data for it wasn't included. :(
Fun fact: There's a hidden Super Easy (called Easiest in some places) difficulty in both the demo and the final game. (haven't managed to get access to it yet though)
