- Beef and Barley Stew -
Note: In order to expedite the cooking process at the campsite, I precooked the beef shanks in the instant pot. If you wish to do the same, season the shanks with salt and pepper, add them, along with one cup of water into the instant pot. Cook for 25 minutes at high pressure. Natural release (15 minutes). Shred the meat and defat the bone broth and save it for the stew.
2-3 slices of beef shank (aprox 1 1/2 lbs)
Salt and pepper
1 tbsp vegetable oil
4 cloves minced garlic
2 tbsp tomato past
4 cups chicken broth
1 cup diced celery
1 cup dices carrots
1 large onion
1 bay leaf
1/2 teaspoon rosemary
1/2 cup quick cooking barley
raw horseradish
1. Season beef add oil to a large dutch oven until browned on both sides, about 10 minutes
2. Reduce heat to medium, Remove beef, add onion, carrots, and celery. Saute 4-5 minutes. Add garlic and cook one additional minute
3. Add tomato paste, broth, and bay leaf. Return beef to the pot and simmer on low until until beef is fork tender, about 2 hours. (if you are precooking your beef in the instant pot, add the beef and reserved broth to the dutch oven and simmer for only 20 minutes, for flavors to meld).
4. When beef is tender, remove from pot, shred and return the shredded beef to the dutch oven.
5. Add instant barley and simmer for 10 minutes until tender.
6. Serve with horseradish garnish and a crusty bread for dipping.
