Saw someone make this on a video clip and decided to give it a try. Turned out pretty good!
Ingredients:
1 pound thin sliced bacon (1 pack)
4 boxes Jiffy cornbread mix
4 eggs and 1 1/3 cups whole milk (for the cornbread mix)
2 16 oz cans chili
1 Jalapeno, sliced (I pickled mine in vinegar for 2 weeks)
3/4 pound sharp cheddar cheese (shredded)
Optional: Melted butter for top of cornbread
Directions:
1. Mix cornbread in a large bowl according to the directions and set aside for 5 minutes.
2. Layer the bottom of your casserole dish with the bacon.
3. Put a thin layer of cornbread batter over the bacon. Add a layer of chili with both cans. Cover evenly with shredded cheese. Top with jalapenos.
4. Cover the top with the remaining cornbread batter. I'd put the larger layer on top versus the bottom like I did in the video.
5. Bake at 400 F for 25 minutes. Turn oven down to 300 F and continue baking for another 35 minutes. Optional: Add melted butter over the top during the last 5-10 minutes of cooking.
6. Take out and let cool for 10 minutes and serve.
