Controlling particles directly through velocity is the best method to get exactly the look that you want.
Using the built-in attributes like age you can then further refine the movement over time with amazing flexibility.
This method trumps the traditional CurveForce which operates on updating the force of the points, making it really hard to control and particles often overshoot, escaping the proximity of the curves.
