Today I am sharing this super easy chicken traybake which is packed full of flavour. I love a one pan meal as it means there is minimal washing up after!!! I really hope you enjoy this recipe.. let me know if you give it a try and what you think of it :)

INGREDIENTS:
250g rice
300ml Veg stock (I use boiling water)
1 tin coconut milk
2tsp fish sauce
3 heaped teaspoons thai red curry paste
2 limes - juiced
8 chicken thighs
Tender stem brocolli
