INGREDIENTS:
2 cups rice
Chicken fillets
2 tbsp paprika
1 aubergine
Oil
1 large white onion
1tbsp garlic paste
1tbsp tomato puree
100g sun-dried tomatoes
250g cherry tomatoes
1tsp basil
1tsp oregano
1/2 chilli flakes
1tps paprika
250ml chicken stock
1 tin coconut milk
1 lemon juiced
300g spinach
Parmesan
