After initially trying to edit the nodes of the sun source itself, I abandoned the task of creating cloud shadows, before coming back and attempting it again months later. Using a partially transparent plane, I was finally able to create something which replicated the effect.
This video show cases some examples, but won't necessarily look this dense in final renders.
