Claudia Roden (b. 1936) is an Egyptian-born British cookbook writer and cultural anthropologist of Sephardi/Mizrahi descent. She is best known as the author of Middle Eastern cookbooks including "A Book of Middle Eastern Food", "The New Book of Middle Eastern Food" and "The Book of Jewish Food". In this unique interview for Web of Stories, Claudia Roden is talking to her granddaughter Nelly Wolman about her life in food. [Listener: Nelly Wolman; date recorded: 2022]

TRANSCRIPT: As you see, in Turkey, and in Lebanon, it is the friendships that I value, that I feel make it important for me. Also, I have to say, I did something wrong. And I was told off. Is that I went to a restaurant with him that makes every kind of kibbeh. All kinds of kibbeh. And then she did a kibbeh in a tray, the cook. And then when I came to do the recipe, I didn't want to do anymore kibbeh, that were difficult. And I made my choice on one of her recipes in a tray, where I did just the crust of bulgur and meat that I didn't pound but that I blended to a paste. And then on top of it I put the filling. And then I baked it first and then did the filling separately, put it on top. And Rabigh told me afterwards when I met them in Holland at the awards, 'Why did you do your twist? Why didn't you do it exactly as she said?' So, you see, everybody else is allowed to do a twist, but people feel I betrayed them, if I change something.
