If anyone interested in the big orzo salad I made, here is what I used!
1 zucchini, thinly sliced, then chopped - cooked (but I may use more next time)
600 grams of grape tomatoes (also may use more next time)
Kale (I just stopped putting it in when I had enough of removing the tough parts lol)
1 package of orzo - cooked
the sauce:
3 tablespoons extra-virgin olive oil
3 tablespoons tahini
3 tablespoons fresh lemon juice, more for squeezing at the end
2 tablespoon white wine vinegar
1 garlic clove, minced
½ teaspoon mustard
splash of maple syrup
sprinkle of salt
3 tablespoons water
I eat mine cold, but you can have it warm if you want, too!
