4. ButterCream Cheese Frosting
Each one of these frostings uses cream cheese in different ways and amounts, resulting in 4 different frostings that vary in sweetness level, cream-cheesy-ness, and sturdiness.
Cream cheese, generally speaking, is a difficult frosting ingredient because of the gums often added to give it its "creamy" texture. It looks kinda like butter, so bakers (understandably!) tend to treat it like butter, which usually leads to frosting troubles with leaking, melting, and stability issues, amongst other things.
I try to address these issues at the forefront by developing cream cheese frostings formulated with cream cheese as the *star* ingredient, to limit any problems you may have previously experienced with cream cheese frostings/buttercreams/icings.
