Ingredients:
90g Whole wheat flour
300g pastry flour
80g cacao powder
50g almond powder
350g almond milk
80g coconut oil
100g avocado oil
200g palm sugar
2 tbsp baking powder
1 tsp vanilla
200g prune
100g walnut
Instructions:
1. put all the ingredients together in a large bowl. mix well.
2. bake at 180C/350F for 45 minutes.
3. Enjoy!

ココナッツオイル 80g（カカオバターでも美味しいと思います）
アボカドオイル 100g（クセの少ないオイルで代用可）
パームシュガー 200g（パームシュガーでなくても良し）
プラントベースミルク 350g（最悪、水でもよし）
バニラエクストラクト 小さじ1（省略可）
薄力粉 300g（ぶっちゃけ中力粉や強力粉でもできますが、食感が変わります）
全粒粉 90g（薄力粉390gで作ってもOK、ただしGI値は上がると思います。）
カカオパウダー 80g（省略不可、したらただのプルーンとくるみのパウンドケーキに。）
アーモンドパウダー 50g（必須ではありません。）
ベーキングパウダー 大さじ2（ういろうにしたければ省略可）
プルーン 200g（他のドライフルーツでも全然良し）
くるみ 100g（ヘーゼルナッツやピーカンナッツもオススメ）
「作り方」
１、全ての材料を大きなボウルに入れて混ぜ合わせます。
２、１８０℃で４５分焼きます。

Ingredients:
chocolate fudge :
150g dates
30g cacao powder
1 tsp vanilla extract
espresso ice cream :
4 shots(80 ~ 120ml) espresso
500g banana
100g cashew nuts
50g cacao butter
50g maple syrup
200ml plant-based milk
Instructions:
1. roast your green coffee bean and make espresso.
2. put dates, cacao powder and vanilla in a bowl or food processor and mix well. cut into small pieces.
3. combine all the ingredients for ice cream into a blender and blend until smooth.
4. pour ice cream mixture into an ice cream maker and add chocolate fudge.
5. place it in a freezer for a few hours.
6. Enjoy!
*for those who arent a big fun of banana-based ice cream, heres a basic vegan ice cream recipe for you.
espresso ice cream without banana :
4 shots(80 ~ 120ml) espresso
500ml plant-based milk (thicker is better)
200g cashew nuts (or 200ml oil if you have a nut allergy )
200g maple syrup (or any other sweetener you like)

チョコレートファッジ：
デーツ 150g
カカオパウダー 30g
バニラエクストラクト 小さじ1
エスプレッソアイスクリーム：
エスプレッソ 4ショット（80〜120ml）
バナナ 500g
プラントベースドミルク 200ml
カシューナッツ 100g
カカオバター 50g
メープルシロップ 50g
「作り方」
１、コーヒー豆を焙煎し、エスプレッソを淹れます。
２、チョコレートファッジの材料をボウルなどで混ぜるか、フードプロセッサーなどで混ぜ合わせます。
３、アイスクリームの材料を全てブレンダーで滑らかになるまで混ぜます。
４、アイスクリームメーカーに流し入れ、最後の方でチョコレートファッジを加えます。
５、冷凍庫で数時間ほど冷やし、固まるまで待ちます。
６、エンジョーイ！
＊バナナベースのアイスが好きじゃない方は下記レシピを試してみてください。
エスプレッソアイスクリーム（バナナなし）：
エスプレッソ 4ショット（80〜120ml）
プラントベースドミルク 500ml（濃い方が美味しいです）
カシューナッツ 200g（ナッツアレルギーの場合は太白ごま油などのクセの弱い油で代用してください）
メープルシロップ 200g（甘味料の種類は問いません）

Ingredients:
70g oil
[spice A]
1 tsp mustard seeds
4 cloves
4 cardamon pods
20 fresh curry leaves
20g garlic
20g ginger
200g onion
80g mushroom
400g beet
150g water
200g coconut milk
200g your choice of beans
[spice B]
1/2 tsp coriander powder
1/4 tsp cumin powder
1/4 turmeric powder
1/4 tsp ceylon cinnamon powder
1/4 tsp cardamom powder
2 tsp salt
2 tsp black sugar
Instructions:
1. put oil in a pan and fry [spice A]
2. add garlic, ginger, onion and mushroom and keep frying until cooked.
3. boil beet with 150g water.
4. in a blender, place all the cooked onion and musuroom, 100g boiled beet, 100g beet broth and 200g coconut milk. blend well.
5. transfer the mixture into a pot, add [spice B], beans, salt and black sugar. simmer a little bit.
6. Enjoy!

太白ごま油 70g
マスタードシード 小さじ1
カルダモンシード 4つ
クローブ 4つ
カレーリーフ(生) 20枚
玉ねぎ（スライス） 200g
にんにく（千切り） 20g
生姜（千切り） 20g
マッシュルーム 80g
ビーツ 400g（100gはペースト状に）
水 150g
ココナッツミルク 200g
白インゲン豆 200g
コリアンダーパウダー 小さじ1/2
ターメリックパウダー 小さじ1/4
クミンパウダー 小さじ1/4
カルダモンパウダー 小さじ1/4
セイロンシナモンパウダー 小さじ1/4
塩 小さじ2
黒糖 小さじ2
「作り方」
１、太白ごま油を鍋に入れて火にかける。マスタードシード、カルダモンシード、クローブを加えてパチパチするまで加熱する。カレーリーフを加えたらすぐに火を弱める。
２、１にたまねぎ、にんにく、生姜、マッシュルームを加えて炒める。
３、ビーツを150mlの水で茹でる。
４、２と茹でたビーツ100g、ビーツの煮汁100g、ココナッツミルク200gをブレンダー等で滑らかになるまで撹拌する。
５、鍋に４を移し、白インゲン豆、スパイス類、塩、黒糖を加えて少し煮る。
６、エンジョーイ！

Ingredients:
100g Japanese mugwort
200g adzuki bean
120g beet sugar
600ml water
a hint of salt
450g sticky rice
sticky rice flour or starch flour (for dusting to prevent the mochi from sticking.)
Instructions:
1. harvest Japanese mugwort. wash and boil in salted hot water for 30 seconds, then soak in cold water.
2. squeeze and roughly chop the mugwort. set aside.
3. put adzuki bean in a sauce pan, bring to a boil. drain and add 600 ml water and simmer for 40 to 60 minutes.
4. add beet sugar and salt and boil it down to proper texture.
5. soak sticky rice at least for 8 hours and then steam sticky rice for 30 minutes.
6. put sticky rice and mugwort in a bowl of stand mixer. pound for about 10 minutes.
7. divide the mochi into equal pieces(50g each. makes about 15)
8. wrap adzuki bean paste with the mochi and shape it into round shape.
9. Enjoy!

よもぎ 100g
小豆 200g
てんさい糖 120g
水 600ml
塩 少々
もち米 3合
もち粉 適量
「作り方」
１、よもぎ を収穫して水洗いし、塩を加えておゆで30秒ほど茹でたら冷水にさらします。
２、絞って粗めに切ります。すり鉢やフープロでペースト状にしても良いです。（その方が香りが強くなると思います）
３、小豆と水を鍋に入れ一度沸騰させ、湯を捨ててからもう一度600mlの水から茹でます。目安は40〜60分程です。
４、てんさい糖と塩を加え、適度な固さなるまで茹でて水分を飛ばします。
５、もち米を８時間以上浸水させて、その後30分ほど蒸します。
６、もち米とよもぎ を餅つき機で10分ほど搗きます。
７、よもぎ餅を1つ50gずつに均等に切り分けます。15個くらいできます。
８、あんこを餅で包んで出来上がりです。
９、エンジョーイ！！！

🍃 Today, I have a delicious and nutritious recipe to share with you. Ive noticed that vegan and organic trail food options are scarce in my local market, so I decided to take matters into my own hands and create this homemade Vegetable Fried Rice. Its the perfect addition to your hiking adventures, and its super easy to make.

Ingredients:
450g jasmin rice
550ml water
3 tbsp olive oil (coconut oil is also recommended)
3 cloves garlic
1 tbsp cumin seeds
200g onion
300g eggplant
150g zucchini
1 tbsp salt
1 tbsp beet sugar
1 tbsp soy sauce
30g almonds
30g cashew nuts
30g walnut
black pepper
Instructions:
1. Wash the jasmine rice and cook it in a rice cooker by adding water.
2. Finely chop the garlic and sauté it in a heated frying pan with olive oil and cumin seeds.
3. Cut the onion, eggplant, and zucchini into bite-sized pieces, then add them to the frying pan with the sautéed garlic and continue to cook.
4. Sauté the vegetables until they become tender, then season with salt, beet sugar, and soy sauce.
5. Mix the cooked jasmine rice with the vegetable mixture.
6. Spread the mixture on trays in a dehydrator and dry it at 57°C for about 6 to 12 hours.
7. Once the trail food is ready, add nuts and black pepper, then divide it into thirds and vacuum-seal it.
8. Boil 350ml of water, add the trail food, cover, and wait for 10 minutes.
9. Enjoy your meal!

にんにく 3片
クミンシード 大さじ1
玉ねぎ 200g
ナス 300g
ズッキーニ 150g
塩 大さじ1
てんさい糖 大さじ1
醤油 大さじ1
アーモンド 30g
カシューナッツ 30g
クルミ 30g
黒胡椒
「作り方」
１、ジャスミンライスを洗い、水を加えて炊飯器で炊きます。
２、にんにくをみじん切りにし、オリーブオイルとクミンの種と一緒に熱したフライパンで炒めます。
３、玉ねぎ、ナス、ズッキーニを食べごろの大きさに切り、フライパンに切った野菜を加え、炒めます。
４、野菜がしんなりするまで炒め、塩、てんさい糖、醤油を加えて調味します。
５、炊き上がったジャスミンライスと４を混ぜます。
６、ディハイドレーターのトレーに広げて、57℃で6〜12時間ほど乾燥させます
７、出来上がったトレイルフードにナッツ、黒胡椒を加えて三等分にして真空パックします。
８、水350mlを沸騰させ、トレイルフードを加えて蓋をして10分待ちます。
９、エンジョイ！
