Chicken Pot Pie Soup
3 Carrots
5 cloves garlic
1/2 onion
3 stalks celery
2 pounds potatoes
4 cups chicken broth
1 1/2 cups milk of choice
1 bag frozen peas
2 tsp oregano
salt
pepper
2 Tbsp avocado oil
Instant Pot Version
Peel and chop all veggies, saute with oil for 5 minutes. Add in all remaining ingredients except milk and peas and cook for 7 minutes om high pressure.
I allowed mine to naturally release pressure but after 15 minutes you can quick release if you choose. Remove about a cup of the potatoes and puree with milk. add back in and stir. Stir in peas and allow to sit for 5 minutes.
Stove Top
Peel and chop all veggies, in a large pot add oil and veggies and saute for 5 minutes. Add all remaining ingredients except milk and peas. Cook for 20-30 minutes or until potatoes are tender. Remove about a cup of potatoes and puree with milk. Add back into the soup and stir. Add peas and allow to sit for 5 minutes before serving.
Low Carb/ Gluten Free Cheddar Biscuits
2 cups almond flour
2 tsp garlic powder
2 tsp baking powder
1/2 tsp salt
1 large egg
1/3 cup melted butter
1/3 cup milk of choice
1 1/2 cups cheddar cheese (shredded)
Topping
3 Tbsp melted butter
1/4 tsp garlic powder
1/8 tsp salt
Whisk together all wet ingredients, add in dry ingredients and mix until combined. Add in cheddar cheese and stir until well combined. Using a cookie scoop, scoop biscuits onto a sheet pan lined with parchment. Pat them down slightly and bake at 350 for 12-16 minutes. They will be very soft, allow them to cool for 10 minutes. Mix all topping ingredients and brush it on the biscuits.
