Make this super creamy and flavorful Malamal Chicken at home with simple ingredients! Perfect with roti, porota, or rice. Easy recipe, restaurant-style taste!
Malamal Chicken Recipe
What You’ll Need (For the Marinade/Blend):
5 large garlic cloves
1½ inch piece of fresh ginger
4–5 green chilies (adjust to your heat level)
2 small boiled potatoes
1 cup plain yogurt
Blend all this up until smooth and creamy. Set it aside. This is going to give the dish that luscious, thick texture.
For Cooking:
4 tbsp cooking oil
2 medium onions (finely chopped, ~1 cup)
Whole garam masala:
3 green cardamoms
3 cloves
5 black peppercorns
2 small cinnamon sticks
½ tsp turmeric powder
1 tsp red chili powder
1 kg chicken (bone-in or boneless, your call)
1 tsp roasted cumin powder
2 tsp salt (or to taste)
½ cup water
1¼ tsp garam masala powder
Final Touch:
1 tbsp ghee
2 tbsp fried onions (birista style)
Fresh chopped coriander (as much as you like)
Let’s Cook:
Heat oil in a pan. Add the chopped onions and whole garam masala. Sauté until the onions turn golden brown—this is where the base flavor comes from, so be patient!
Lower the heat, add turmeric and red chili powder. Stir quickly for about 10 seconds to wake up the spices but don’t burn them.
Immediately add the chicken, mix well to coat with all those flavors.
Add roasted cumin powder and salt, mix it all in, then cover and cook on low heat for 5 minutes. The chicken will release some moisture.
Uncover, sauté for another 2 minutes on medium heat. Then pour in that creamy yogurt-potato mixture and the ½ cup of water. Stir well.
Sprinkle in garam masala, give it a good mix, and let it cook on low to medium heat for 25–30 minutes. Stir every 5–6 minutes so nothing sticks or burns.
Once the chicken is fully cooked and tender, finish it with ghee, fried onions, and coriander.
Serve it up with:
Roti, porota, or plain rice—anything goes. Malamal Chicken is rich, cozy, and bursting with flavor.
