This recipe for Chicken Pasta Salad was adapted from a recipe I found in a cookbook called Meet Me at the Garden Gate. Here are the ingredients. To print, simply highlight with your cursor, right click, and select "print":
Chicken Pasta Salad
8 oz Cooked Pasta like rotini, jumbo mac, bow tie, etc.
3 Cups chopped cooked *chicken
1/2 to 2/3 Cup ** Italian salad dressing
1/2 Cup mayonnaise
2 Tablespoons lemon juice
1 Tablespoon mustard, dijon
1 Cup chopped scallions
1 Cup black olives
1 1/2 Cup chopped cucumber
1 Cup artichoke hearts, quartered
1/2 Cup roasted red peppers
1/2 Cup Basil and/or parsley
1/2 teaspoon black pepper
Salt to taste, about 1/2 teaspoon
* If using rotisserie, traditional or lemon pepper flavor works great.
** Good Seasons dressing is also wonderful in this salad
