Italian Minestrone Soup

CHRISTINA’S VEGETABLE SOUP

3 tbsp oil in pan
Heat on med or med low
Add 5 cloves of minced garlic

Cook until golden be careful not to burn
Add 1 large sweet onion minced or finely chopped cook until translucent
Add 2 tbsp Italian Seasoning from The Spice House
Add 2 sprigs FRESH thyme

Add 1 medium package of small baby potatoes cut in pieces
2 zucchini diced and chopped
1 container of Bella fresh mushrooms
1 bag frozen peas
1 bag mixed vegetables
1 can cannelloni beans
1 can northern beans
1 can kidney beans
1 large bag of spinach
1 large can crushed tomatoes
Add 2 qt organic chicken broth low sodium
Simmer on low until fully cooked.
Salt and pepper to taste!
Enjoy!

Serve with fresh bread of choice!
