CHEESECAKE LEMON BARS
Crust:
1cup flour
1/4 cup powdered sugar
1/3 cup melted butter
1/2 tsp vanilla
(I ended up doubling the crust and it was perfect)
Cheesecake:
8oz cream cheese
1 egg
1/4 cup sugar
1/2 tsp vanilla
(I wish I had doubled this but Bryant said not to change a thing from how I fixed it)
Lemon top:
1 cup water
1 cup sugar
3 egg yolks
1/4 c lemon juice (I used more)
1/3 c cornstarch
1/4 c water
3 Tbsp butter
Mix crust ingredients and press into a 9x13 pan.
Mix all cheesecake filling ingredients until smooth. Pour over crust and bake in a preheated 350° oven for 20 to 25 minutes.
Mix eggs yolks, cornstarch and 1/4c water together well.
Boil 1 cup sugar and 1 cup water together until boiling. Slowly add egg and cornstarch mixture whisking constantly until thick. Remove from heat add butter and lemon juice. Pour over crust & cheesecake. Cool completely and dust with powdered sugar.
