Oil temp goes up when the AC is off and vice versa. Seems nonintuitive, but there must be extra cooling invoked when the AC is on.
2016 958.2 Cayenne. Nothing too earth shattering here, but I seemed to notice a pattern with the oil temperature doing the opposite of what you might expect when turning the AC on. When it is ON, the oil temp goes down by 15-20 deg F. Similarly, when the AC is off, the oil temp goes up.
