In today's canning video, we're doing raw jalapenos. Unlike last week's video, these peppers are *not* pickled - which means we have to use the pressure canner. We'll do some rings and some just cut in half, and end up with several pints of beautifully canned peppers.

Jalapeno Pressure Canning Notes:
-2 1/2 lbs of jalapenos makes about 3 pints of canned peppers.
-Use 10 lbs of pressure if using a weighted topper, or 11 lbs of pressure if using a dial gauge.
-Process for 35 minutes in pint jars.
-You may need to adjust the pressure and processing time if you live at a high altitude.
