Hello and welcome to Old Ways Gardening and Prepping.πŸ€ Would like to welcome you each in to our kitchen and front porch this beautiful evening. Angela blessed me with a bunch of bags of frozen tomatoes and decided to put them to good use.

Love good Mexican chip salsa and always look forward to having it. Now thankful to have a good supply now to go up in the pantry. It's so easy to make and can up which I love to do.

Below is the ingredients list for the single batch of salsa. You can still make it as large as mine or a single batch. Just adjust the seasoning as you go before canning it up.

Homemade Mexican Chip Salsa

7 cups of tomatoes
1/2-1 small can of tomato paste
1 1/2 cups of diced onions
1 can of diced green chilies or 1 1/2 cups of bell peppers
2 TBsp's of minced garlic
3/4 cup of 5% vinegar of choice
1 tsp of ground cumin
1 tsp of black pepper
1 TBsp of dried oregano
1/4 cup of cilantro - optional

Mix everything together and taste to see if you need to adjust seasonings. 1/2 inch headspace. Process pints 15 or quarts 25 minutes. Enjoy πŸ¦‰
