Here's an interesting and quite obscure easter egg from California Speed on the Nintendo 64. The face of a developer (presumebly producer Robert V. Daly ?) can be found behind a tree near the end of the Monterey track.
I haven't checked yet if the Arcade version has this easter egg, but I doubt since it was developed by a different company. Most people are aware of this game from the creepy placeholder text on a billboard, but I never saw this one mentionned before other than a picture I saw more than 10 years ago (which I couldn't find anymore so I couldn't credit the original person who found this).
