Atomic Shrimp | Butternut Squash Cake - Tastes Like Pumpkin Pie! @AtomicShrimp | Uploaded December 2023 | Updated October 2024, 2 days ago.
My garden decided to grow butternut squashes this year (I was merely a bystander) so I made this cake with one of them. It's delicious!

The cake is based on a 'zucchini bread' recipe below, which I think came from one of our American friends.

This is the recipe I used as a basis - my changes in brackets():
Ingredients:
3 eggs
1 cup vegetable oil (I substituted melted butter)
2 cups sugar (I only used one and a half)
2 teaspoons vanilla extract
3 cups self-raising flour
¼ teaspoon baking powder
1 teaspoon baking soda (I omitted this completely by accident and it was fine)
1 teaspoon cinnamon
½ teaspoon nutmeg
(I did not have the exact amounts of these spices and threw in some ground mixed spice, which is made from Cinnamon, Coriander Seeds, Dill Seeds, Ginger, Cloves and Nutmeg - I was less than exact with the spices and probably ended up with about 3 teaspoons of spices in total)
1 teaspoon salt (I omitted this as the butter was salted)
½ cup chopped or crushed walnuts
2 cups grated zucchini/courgette (I used butternut squash)

Method:
Beat the eggs in a large bowl, add the sugar and fat and blend together.
Sift in the flour, baking powder and spices, mix until it forms a uniform batter.
Add the walnuts and grated squash, stir again until evenly mixed.
Transfer to a lined tin of suitable size and bake in a preheated oven at 180C (gas mark 5, 350F) for 1 hour or until a skewer pushed into the middle of the loaf comes out clean.

Allow to cool before removing from the tin. Serve sliced and optionally, buttered.
