What does medieval food actually taste like? Chef & Ashwin Gane put that question to the test — and pulled off a full 3-course feast for the DND Immersive Tavern Feast event. 🍖
🥩 Braised Short Ribs — deboned to fit the pressure cooker, seasoned with Chef D's house blend, seared for a fire-kissed crust, and finished with verjuice (the medieval substitute for vinegar) and a warming spice blend
🥧 Tavern Greens Tart — a savory medieval "quiche" packed with rainbow chard, spinach, ricotta, mozzarella & parmesan, and spiced with ground ginger, cinnamon, cloves, and fennel
🍡 Pompeii-Style Meatballs with Almond Milk Sauce — pulled straight from a medieval cookbook. The almond milk sauce (just nutmeg, sugar, stock & cornstarch) ended up being the MVP of the whole feast
