Sourdough Discard Strawberry Rhubarb Breakfast Muffins

Basil Walnut Pesto
1 cup finely grated parmesan cheese
4 cups packed basil leaves
1 cup walnuts and/or pine nuts
1/2 tsp. salt
1/2 cup light olive oil or avocado oil
8 garlic cloves, minced
black pepper, to taste
Put all ingredients in a food processor or blender and blend until smooth.
Use in 5-7 days or freeze for long-term storage.
