Join me as I cook up a delectable batch of Buffalo Tofu! It's an uncommon American treat, but very nutritious - full of protein and very little fat!
Here's the basic recipe, but really - I made this up, so it's pretty fluid and I would love to hear about suggestions you may have -
1 block of firm Tofu (usually 12 oz) - drained well.
1/4 cup Olive Oil
1/4 cup lime juice (or the juice of 1-2 fresh limes)
1 TBSP honey (or agave)
3 -4 cloves of garlic, minced (I used more, but I'm a Gar-li-holic)
Sprinkle of salt and pepper
Your favorite Hot Wing or Buffalo Sauce (my choice is Frank's Red Hot Wing Sauce)
Cut tofu in small cubes. Each cube should be about 2 bites size. Whisk together oil, lime juice, honey, minced garlic and salt and pepper. Toss in Tofu pieces and toss bowl until they are well-coated. Put in fridge to marinate for 1 -2 hours.
Preheat oven to 400. Add sauce to tofu mixture to desired amount. Spread pieces out on cookie sheet covered with parchment and be sure to cover will all your delicious sauce. Bake for about 30 minutes, then remove from oven and turn tofu. Return to oven for about another 20 minutes or until somewhat crispy.
Enjoy with a little additional Buffalo Sauce, fresh lime spritz, sour cream, etc.....
These bits make a fun and surprising taco or burrito filling with lettuce, tomato, onions, etc..
