Refrigerator Bran Muffins
1 c bran or wheat germ
1 c boiling water
1/2 c oil
1 c sugar
1 c brown sugar
2 eggs
2 cups buttermilk
2-1/2 c flour
1 T baking soda
1 t salt
2 c bran flakes cold cereal
Mix bran and water and set aside to cool. In a large bowl, cream the oil, sugar, and
eggs. Add buttermilk, then bran mixture (when it’s not too hot). Sift together the flour,
soda, and salt. Add to large bowl and stir well. Add bran flakes and mix thoroughly.
Leave in fridge overnight before using.
Bake in muffin pan at 425 for 15-18 minutes. Keep in fridge for 3-4 weeks.
NOTE: If you don’t have buttermilk, you can use 1-1/2 c plain yogurt with 1/2 c water or
other buttermilk substitutes.
