Use the sword Zangetsuto that you get from this boss fight in the story:

The technique, Eleventh Hour, is a deflect/counter executed with: Forward, Forward, Square
You don't even need to deflect an attack. Physical enemy contact with the deflect stance triggers the technique.
Use the first corridor in the castle with bats and standard mortes. It should take you between 10 and 15 minutes to get the trophy/achievement.
