This one's pretty crafty, he's got several fast moves he can use against you in close quarters and all of them vary in their windup speed. The two main ones he performs from his left side, with one so quick that you have to immediately recognize its startup or assume he'll do it and parry in hopes you're right (which is what I did here). His alternative to this attack is a move that also comesfrom his left side, where he contorts his body and takes a swing, which is also very fast but just that little bit slower than the other attack that trying to parry it with the same speed results in a failure. There's also a cheeky one he does by performing a fakeout from his right side just to hit you a second later from the left, which can result in you not being able to roll away in time if you get baited.
Conclusion: If you wanna parry him to death, I don't recommend what I did here, It's better to look out for attacks with longer wind-up. The easiest one to react to is the one where he drags his knife on the ground, with sparks as a visual indicator, and slashing upwards after dragging it a bit on the ground. You can also learn one of his combos and react to one of the attacks in the string. (though to be honest it's easier to just bludgeon him to death when he's open to attacks, dude has some pretty weak poise and is easy to stagger, so properly timed jump attacks and light heavies are your friends)
