Much like in real life you can change many things about yourself. From your class/career path, hair color/style, and apparently gender although I've never tried nor seen that happen personally so take that with a grain of salt. But one thing you can't change is your race. And while it's too late to change what you picked for your character in meatspace it's not too late to avoid making mistakes in BG3.
