Mom & Scott really enjoyed this dinner as well!
1 lb ziti pasta
1 t. olive oil
1 lb ground beef
1½ t. salt
1 t. sugar
¼ t. pepper
½ t. granulated garlic
3¼ c. chopped tomatoes
½ c. grated cheddar cheese
15 oz. tomato sauce
2 c. water
3 T. Lemon juice, freshly squeezed
*NOTE: I added in about 2 tsp. total of salt, 1/2 tsp. total of black pepper and about 1-1/2 tsp. granulated garlic.
Cook pasta: Follow instructions on package to cook pasta until it is soft to bite into. Strain.
Pour olive oil onto pasta and stir, to keep it from sticking together. Set aside.
Brown ground beef: Place ground beef into a Dutch oven. Brown the meat over medium high
heat. As it cooks, use a wooden spoon or spatula to break the meat down into small
pieces. Once it is browned, sprinkle with salt, sugar, pepper, and granulated garlic. Stir to
combine and cook for 1 minute. Using a slotted spoon, remove the beef from the pot and
place it into a blender. Set aside.
Heat chopped tomatoes: Return the Dutch oven with the remaining grease to medium-high
heat. Add the chopped tomatoes. Stir to combine. Once the mixture is hot, add grated
cheese. Stir until cheese melts and dissolves.
Blend beef and tomatoes: Carefully spoon or pour tomato-cheese mixture into blender
with beef. Turn on blender and continue to mix contents until beef is completely liquefied
and combined with tomatoes.
Make Beef-a-Roni: Pour contents of blender back into Dutch oven. Add tomato sauce, 2
cups water, and lemon juice. Stir until water is completely incorporated. Over medium-high
heat, bring sauce to a low boil. Reduce heat and add pasta. Stir until combined. Simmer for
10 minutes. Spoon into bowls. Serve.
Makes 4–6 servings.
