Birria Recipe
Ingredients:
-3 Pounds chuck roast.
-3 pounds short ribs.
-2-3 beef back ribs.
-1 cup tomato sauce.
-1-2 onions.
-1-2 garlic bulbs.
-5-6 cups beef stock.
-3-4 guajillo and ancho chilies each, seeded and stemed.
-1 tbsp olive oil.
-1-2 tbsp Mexican seasoning or taco seasoning.
-1 tsp cinnamon.
-1 tsp oregano.
-1 tbsp salt.
Prep:
-Season meat with Mexican seasoning.
-Add oil to pot.
-Sear beef on all sides, remove and set aside.
-Add the onions and garlic to pot and saute for 4-5 minutes.
-Add the tomato sauce and cook for 4-5 minutes.
-Place the beef back in the pot and mix up all contents.
-Pour beef stock in until most of the beef is covered.
-Add the bay leaves, cinnamon, salt and oregano.
-Cover the pot and simmer for 3-4 hours until beef is tender and shreddable.
-Remove and shred all of the beef.
-Strain the rest of the contents of the pot. The strained cooking liquid is your consume for dipping.
