Honey Glazed BBQ Salmon with Yuzu Ponzu Bok Choy

Ingredients
Salmon
4 (6-ounce) skin-on salmon fillets
4 tablespoons honey
BBQ Seasoning
½ cup dark brown sugar
¼ cup granulated sugar
¼ cup sweet paprika
2 tablespoons kosher salt
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 tablespoon ground black pepper
1 tablespoon mild Hatch chile powder
½ teaspoon dried oregano
½ teaspoon ground cumin
¼ teaspoon dried thyme
Yuzu Ponzu Bok Choy
4 heads baby bok choy, halved lengthwise
4 teaspoons olive oil, divided
Kosher salt, to taste
Freshly ground black pepper, to taste
Yuzu Ponzu Sauce
¼ cup ponzu sauce
1 tablespoon hot yuzu sauce
2 teaspoons toasted sesame oil
½ teaspoon gochugaru
Directions
1. Preheat the grill: Prepare the grill for medium-high heat. Clean and lightly oil the grill grates.
2. Make the BBQ seasoning: In a medium bowl, combine the brown sugar, granulated sugar, paprika, kosher salt, garlic, onion, black pepper, Hatch chile powder, oregano, cumin, and thyme. Mix well and set aside.
3. Season the salmon: Lightly brush the salmon with olive oil, then generously season the flesh side with the BBQ seasoning. Let the salmon rest for a few minutes while the grill finishes heating.
4. Prepare the bok choy: Brush the cut sides of the bok choy with olive oil and season with kosher salt and black pepper.
5. Make the yuzu ponzu sauce: In a small bowl, whisk together the ponzu sauce, hot yuzu sauce, toasted sesame oil, and gochugaru. Set aside.
6. Grill the salmon: Place the salmon skin-side down over medium-high heat. Close the lid and grill for 8–10 minutes, or until the internal temperature reaches about 130°F and the skin is crisp.
7. Glaze the salmon: Brush or drizzle the honey over the salmon. Close the lid and cook for another 1–2 minutes, until the honey caramelizes and the salmon reaches an internal temperature of 135–140°F.
8. Grill the bok choy: While the salmon cooks, place the bok choy cut-side down on the grill. Grill for about 4 minutes, then flip and cook for another 4 minutes, until the stems are tender and the leaves are lightly charred.
Serve: Arrange two pieces of grilled bok choy on each plate and spoon about 1½ tablespoons of the yuzu ponzu sauce over the top. Add the grilled salmon and serve.
