Campfire hot dogs are good, but BBQ chicken nachos are better.

These loaded BBQ chicken nachos are an easy camping dinner made with tortilla chips, shredded chicken, melty cheese, red onion, jalapeños, cilantro, BBQ sauce, and chopped mango. Cook them over the UCO portable grill until the chicken is warm and the cheese is melted, then add BBQ sauce at the end so the nachos don’t get soggy.

The chopped mango on top was the chef’s kiss.

Ingredients:

Tortilla chips
Cooked shredded chicken
Shredded cheese
Red onion
Jalapeños
Cilantro
BBQ sauce
Chopped mango
Sour cream or crema, optional
Lime, optional

Camp cooking tip:
Add the BBQ sauce only after the chicken is warmed and the cheese has melted. This keeps the chips crispier and the nachos loaded, not soggy.
