Bar-A-BBQ - Montgomery (2026)
Let me tell you about a guy named Cooper Abercrombie.
Born and raised in Montgomery, Texas. Spent his days building fences for a living.
Then he bought a house. And you know what happens when you buy a house in Texas.
You gotta have a smoker.
"It got me hooked once I realized I wasn't any good at it," Cooper said. "I don't
like not being good at things."
That's the whole story right there.
What followed was an obsession. Cooper started watching Meat Church videos. He talked
shop with James McFarland from Reveille Barbecue. Then he found his way to Jonny White
and Lane Milne over at Goldee's Barbecue in Fort Worth, widely considered the best
barbecue in Texas. And he talks to them almost daily. Their influence changed everything.
How he trims his meats. How he makes his sausage. And why he renders beef fat into
tallow for almost every single dish he serves.
Cooper and his wife Shelby started with a BBQ trailer in 2019, doing pop-ups around
Montgomery. Then came a retired ice cream truck from Amarillo, outfitted for smoke and
fire. Then a refinished house on the main drag in town and a thousand-gallon offset
smoker from Mule Skinner Smoke Rigs. Texas Monthly noticed. Top 50. Done.
Now here's what makes Bar A BBQ different from every other joint on the list. Cooper
doesn't want fancy. "I want our menu to be like what our grandma's kitchen was like
growing up," he said. So the sides aren't trying to impress food critics. They're
trying to feed people. The Brisket Dirty Rice is laced with shredded smoked brisket.
The Cheesy Tater Casserole is exactly what it sounds like and better than you'd expect.
The Cucumber Salad gives you something cool and clean to cut through all that smoke.
And the banana pudding, topped with crushed gingersnaps and spiked with cream cheese
for body and a little tang, will make you rethink every banana pudding you've ever had.
The sausages are next level. Cooper builds them from brisket trimmings, pork ribs, and
pork shoulder. The South Texan link gets pepper jack and dried chiles. The Cheesy Texan
gets Monterey Jack and fresh jalapeños. Every spice and pepper comes straight from the
Houston Farmers Market. You can taste the intention in every single bite.
And on Saturdays, the Dino Beef Ribs come out. You'll know them when you see them.
