Banana Bread Recipe:
Preheat oven to 350 degrees
grease a bread pan
3-4 mashed brown bananas
1 egg
1/4 cup vegetable oil
1/8 teaspoon salt
1/4 cup brown sugar, packed well
1/2 cup granulated white sugar
1.5 cups flour (I use 1/2 cup whole wheat flour and 1 cup all purpose flour. You can do the entire amount all purpose)
1/4 teaspoon baking soda
1.5 teaspoon baking powder
1/4 teaspoon cinnamon or Pumpkin Pie Spice
1/2 cup chopped nuts, if desired
Mash the bananas in a bowl. Add egg, oil, salt, and sugars. Mix well.
Add flour(s), baking soda, baking powder and cinnamon. Delicately fold in baking soda, powder and cinnamon into flours before mixing into wet portion in bowl. Add nuts if desired.
Spread into prepared pan.
Bake at 350 degrees in center of oven for 50-60 minutes until done.
Remove from oven when done, let rest in pan for 10 minutes before transferring to cooling rack. Keep wrapped tightly in a container or aluminum foil.
