My family and I have been hunting and eating Western Diamond Back Rattlesnakes for years now. Typically I batter them, and deep fry them. But after a while, deep fried foods get boring, and I need to try something different. 

    In October 2018, I stumbled onto a Video on YouTube by Bob Hansler. youtube.com/user/horsebackbob Bob has a channel where he and his sidekick go into the Texas wilderness and show people how to survive by eating the foods found in nature. What made this video special was that Bob was cooking and eating the rattlesnake that bit him a month earlier. After a painful recovery, Bob respectfully prepares the snake he harvests. Ingredients:

1.  1-Rattlesnake

2. 2 pounds of bacon (your choice of cut)

3. 1- small Onion (I used a sweet onion)

4. 9 mini sweet pepper (yellow, red and orange)

5. 2-4 Garlic Cloves chopped.

6. 1 or 2 Serrano peppers. (these are spicy use as much as you want depending on your heat tolerance.)



Directions:

1. Preheat over to 400*

2. Chop the Onion, sweet peppers, garlic, and Serrano peppers, mixing together in a bowl. 

3. Place chopped mix into the body cavity. Do this in small sections, wrapping the bacon around the snake as you go. Use toothpicks to hold bacon in place.

4. Place snake inside dutch over cover, and bake for about 45 min. 

5. Remove lid turn on the broiler, and broil for 4 to 5 min on each side. Or until bacon reaches the desired crunch. 

6. Cut the snake into sections and serve hot.
