Let us look back to this golden weekend in September.
My Hedgerow ketchup was made with
1 Lb of Blackberries, Cherry Plums, Apples and Damsons
1/2 Lb of of Sloes, Elderberries
plus a hand full Hawthorne and Rosehips for good measure
2 and 1/2 pints of Vinegar (cider, malt or wine)
2 pints of water
Cinnamon bark, cloves, black pepper corns and juniper berries
1 Lb and 13oz (what a silly quantity) of brown sugar
Ketchup is traditionally a condiment with a sweet and tangy flavour,
The historical recipes where often a way of preserving and flavouring mushrooms, walnuts and other fruit and vegetables with spices. I really don't like tomato ketchup, its the quickest way to ruin a good meal in my opinion. But I love this fruity and spicy affair.
