Not much reading happened this weekend, but lots of thrifting, used book shopping, and taco soup. Pretty good if you ask me!
Taco Soup Recipe - (I learned it from Hope_Faison on IG)
Dump all in crockpot and cook for about 4 hrs on high or longer on low.
1lb of meat (browned)
2 cans of beans (drained and rinsed)
1 can of corn (drained)
1 can Rotel
1 can diced tomatoes
1 pkg ranch dip mix
1 pkg taco seasoning
Liquids to taste - I used 1/2 cup water at first, but it wasn't enough for me since I like it a bit brothy. So I added about 2 cups of chicken broth (a guess since I didn't measure this part). Use less if you want more of a chili texture.
Serve with your fave toppings. I like to add some plain greek yogurt, shredded cheddar cheese, and tortilla chips.
