Back in the days when I was actively designing such farms I had some interesting concepts that I now decided to share. And I started with this thing - hostile mob farm that farms all hostile mobs that spawn without some special biome or bounding box (spiders, skeletons, creepers, witches, endermen and zombies). I think its a good option for a starting server, because this farm alone supplies you will all basic materials to start making faster farms.
Farm stats:
-4 subchunks
-no bedrock breaking needed
-8.3k spawning spaces
-120k items/h:
arrows/bones/gunpowder - 30k
string - 21.5k
rotten flesh - 6k
ender pearls - 1.5k
sticks - 0.7k
redstone/glowstone/glass bottle/spider eye/sugar - 0.35k
