Sugar comes from either sugar cane, sugar beets or corn (corn syrup). All three of these crops have issues with either slavery/worker exploitation, and/or gmo/pesticide/bad farming practices.
After my fast, I plan to buy only fair trade sugar and chocolate. It is more expensive but I should be saving it for special occasions, not an every day thing, anyway!

Dried Fruit Compote:
This one is for postpartum moms so ignore those details if you aren't postpartum! A little TMI IMHO! LOL But the recipe looks excellent. And I think topped with a dollop of whipped cream will make an excellent desert for St. Nick's Day:

Fried Plantains:
This recipe says this is a Caribbean treat but it is also Mexican. In fact, we started eating Fried Plantains when our daughter from Cote D'Ivoire made them for us. So they are big in West Africa too! This recipe says use vegetable oil but Coconut oil is better for you and works well too.

Homemade corn chips:
I couldn't find the original recipe I used for this but it is so easy I can just tell you! For me I have to find an all corn (naturally gluten free) pack of tortillas. This can be tricky because a lot are a mix of wheat and corn. Here's an article listing the best brands: glutenfreeonashoestring.com/the-best-corn-tortillas
Cut the tortillas into 4 sections (I do a couple at a time with either my kitchen shears or a knife).
Drop them into some hot melted coconut oil (a couple of tablespoons maybe?)
Fry them up quickly - only takes a minute or two for them to crisp up. Put them on a plate with something to drain the oil off (paper towel or if you avoid buying PT some brown paper from a bag).
Dust with salt (and you can sprinkle very lightly with lime juice.)
